Dehong, in Yunnan province, offers a rich and diverse food culture influenced by the Dai and Jingpo ethnic groups. The vibrant street food markets and traditional festivals highlight the region's culinary traditions, offering a unique blend of flavors and cultural experiences.

Shengjiang Bamboo Tube Dish:

Shengjiang Bamboo Tube Dish originating from ancient culinary traditions and abundant bamboo resources in the region. The dish uses fresh local ingredients such as chicken, wild vegetables, and spices, which are placed inside bamboo tubes and covered with bamboo leaves. Then slow-cooked over charcoal for hours. This unique cooking method preserves the original flavors of the ingredients, resulting in a delicious and aromatic dish.

Ghost Chicken:

Ghost Chicken is a delicacy of the Dehong Dai ethnic group, with its origins in ancient Dai mythology. This dish represents the local culinary culture and also embodies the deep connection between the Dai people and their food and nature.

Guoshou Rice Noodles:

Guoshou Rice Noodles are a delicacy of the Dai ethnic group, originating from their traditional handmade crafting techniques. Its name comes from the method of hand-pinching rice flour during the production process.  When cooked, it is typically served with fresh vegetables, meat, and specially seasoned broth, offering a fragrant and delicious flavor with a delicate and smooth texture. Guoshou Rice Noodles reflect the Dai people's meticulous handling of food and culinary artistry.

Yunnan Roast Beef:

"Yunnan Roast Beef" originally served as a royal dish of the Dai ethnic group and is one of the three famous Dai dishes, known in Dai as "Chong Ganba." It involves selecting pork or beef, marinating it with special techniques, and sun-drying until the meat becomes hardened. This unique production method enhances the texture and flavor of the dried meat.
